Way better Werther’s Original
Ingredients
- Organic coconut sugar -150g
- Grass fed butter - 100g
- Grass fed gelatine - 2g
- Grass fed heavy cream - 50g
- Organic vanilla bean - 1/4 bean - you can use extract, the issue is that the heat is going to evaporate it.
- Salt - pinch
Steps
1Bloom gelatine in cool water. 2g gelatine to 10g water.
2Open up a quarter of the vanilla bean.
3In a saucepan, melt butter over low/medium heat, when melted slowly add the coconut sugar. Keep stirring continuously for about 3-4 min until combined. Add cream, stir occasionally. Increase to medium heat, use a food thermometer and heat to 300f.
4Take off the heat, add the gelatine, vanilla bean, and salt. Mix.
5On unbalanced baking sheet, shape into Werther’s, I used a straw to create the dent in the middle.
6Let cool and harden at room temperature for 2-3 hours.
