healthiest Poptarts in the

Ingredients

  • Organic coconut flour - 1/4 cup
  • Organic almond flour - 1.5 cups
  • Organic extra virgin coconut oil - 1 tbs
  • Organic vanilla bean- 1/2 stick
  • Organic maple syrup - splash
  • Organic date sweetened chocolate- I used @theconsciousbar.co - 1 bar (50g)
  • Organic frozen strawberries- 2 cups
  • Organic lemon - 1
  • Organic grass fed gelatin- 1 tbs

Steps

1In a food processor mix coconut flour, almond flour, coconut oil, splash of maple syrup, and vanilla bean. (I didn’t really mixed the vanilla bean whole, just the seeds lol).
2Mix in food processor and add a touch of water to get sticky dough consistency.
3For our filling in a pot- strawberries, splash maple syrup, squeeze lemon, and when combined add gelatin. Mix into jam. Let cool.
4Preheat oven to 350f.
5Shape dough into pop tarts.
6When filling is cool add, close off, and with toothpick add some holes on top.
7In the oven for 20-30 min. Let the sides get golden, but not the mid part. Let cool.
8Melt chocolate, top it, in the fridge for 10 min to set and enjoy!
