Clean Cinnamon Toast Crunch

Ingredients

  • Organic coconut flour - 1/2 cup
  • Organic rice flour - 1/2 cup
  • Organic ground Ceylon cinnamon - 2 teaspoons
  • Organic cold pressed coconut oil - 2 teaspoons
  • Organic maple syrup - 1/5 cup roughly
  • Redmonds real salt - a pinch
  • MCT oil - a splash

Steps

1Preheat oven to 350f.
2In a food processor mix coconut flour, rice flour, cinnamon (1 teaspoon), coconut oil, maple syrup, and salt. Mix.
3Add a splash of water. Mix.
4Get to wet sand consistency.
5On unbleached parchment paper flatten. Make sure your dough is not too thick! If you want them crunchy they need to be relatively thin (but not extremely thin).
6Then to make our topping? Seasoning? However you want to call it - a splash of MCT oil, 1 teaspoon cinnamon, a splash of maple. Mix into a paste and spread on the dough.
7In the oven for 15-20 minutes- let cool and make sure they’re dry.
