Protein pizza

Ingredients

  • Organic ground chicken- 1lb (per 1 pizza)
  • Grass fed butter
  • Organic shallot 1-2
  • Organic garlic - 1 clove
  • Sea salt
  • Organic tomato paste - 2-3 teaspoons
  • Fresh mozzarella (I used A2 buffalo)
  • Organic pepperoni (I found good quality turkey pepperoni)
  • Topping I used: organic mushrooms, thinly sliced shallot, feta cheese, arugula, EVOO, organic arugula, balsamic vinegar.

Steps

1Preheat oven 400f.
2Flatten chicken into pizza shape and into the oven 20 min. That’s our crust.
3Pizza sauce is super simple.
4Butter, shallots, brown them, then add chopped garlic clove for 30 sec and add 2-3 teaspoons of tomato paste and some water to reach sauce consistency. Set aside.
5Crust out the oven. Top with sauce, mozzarella, pepperoni, and any other topping you want - I added chopped shallots and mushrooms.
6In the oven 5 min.
7Take out and top with more stuff- I made two pizzas, one topped with feta cheese and olive oil, the other with arugula and balsamic vinegar. No rules put on what you like. Let it rest for 3-4 min and enjoy!
