Healthier Doritos
Ingredients
- Organic masa harina - 240g (mix with 350g of water)
- Organic smoked paprika - 1tbsp
- Organic paprika - 1tbsp
- Organic chilli powder - 2tsp
- Organic garlic powder - 1tsp
- Organic cayenne pepper powder - 1/2tsp
- Parmesan crisps - 20g
- Organic freeze-dried raspberries - 10g
- Fine sea salt - 1tsp
- Grass-fed beef tallow (for frying).
Steps
1Add warm water to the masa and shape into a ball. Let rest for 10 min under a damp towel.
2Mix in the seasoning- mainly to break the Parmesan crisps and raspberries but also to make it into a homogeneous paste.
3Preheat oven to 350f.
4Cut masa into small balls, flatten them, and cut into triangles - you want to aim for 1/8inch thick for the best crunch.
5In the oven for 10 min to dehydrate. Let cool.
6Melt beef tallow and fry, roughly 20 sec per side or until golden. Dry on a cooling rack, and when still hot apply the seasoning.
