Best chicken and potato
Ingredients
- Organic boneless skinless chicken thighs - 1.5lb
- Organic russet potatoes - 2 medium sized
- Avocado oil spray- I used @chosenfoods
- Grass fed beef tallow - 2tbs
- Sea salt
- Organic white onion - 4 small ones
- Organic coconut aminos - a splash
- Organic date syrup - 1tbs
- Organic turmeric - 1tbs
- Organic cumin - 1tbs
Steps
1Cut potatoes, a spray of oil and in the oven at 400f for 20 min. I finish them off with 3 min of broiler to get nice color. Take out and let cool.
2Get a stainless steel pan nice and hot, add tallow, onions, salt- slightly reduce heat and let caramelize.
3The key to caramelizing is to add water a few times, this way the onion doesn’t burn, when evaporates, add more, about 2-3 times until onion is golden.
4When golden add in coconut aminos, date syrup, turmeric, and cumin. Mix add more water and reduce the heat to low.
5In a separate pan, tallow, sear the chicken about 2.5min per side, get a nice crust, AND move it with the potatoes to our main skillet to cook on medium heat-roughly 10 min. Make sure to mix everything and enjoy!
